Lobster, along with caviar, is one of the last bastions of luxury, the ultimate Christmas treat. Think of proper, old-school lobster Thermidor, bubbling with cheesy sauce. There’s a Christmas Eve supper to warm the cockles like a cashmere sweater for the soul. And if prices can make you choke on your blinis, bear in mind the crustaceans are a wild food that need catching individually in baited traps, or “pots”, and that it takes at least four years for a lobster to grow to minimum legal size (87mm from the eyes to the base of the tail....).
